Risotto Caprese

The gf was out at a focus group thingy, so I decided to make risotto for dinner. I last made risotto over 20 years ago, and it was only OK. Tonight, I made a risotto that was flavored with fresh mozarella, fresh basil, and tomatoes...Risotto Caprese:

It was fucking awesome. It did go gummy a bit early, but considering I'm 20 years or so out of practice, I'm really not complaining.

As is our wont, the rats got some for their dinner, too.

They really liked the mozarella.
